From his childhood in Normandy and his training with such greats as Jean-Pierre Morot-Gaudry and then Alain Dutournier in Paris, Alain Chapel in Mionnay, and finally Alain Ducasse around the world, he has forged a palate and an identity: “My prioritý, it’s a perfect harmony between nature and man”.
He meticulously selects all producers and breeders for their quality but also for their attachment to the territories. His cuisine is from the heart, authentic, sincere, sustainable and respectful of French culinary traditions. With his lively seasonings, Frédéric Vardon’s cuisine is nourished by the finest products selected during his many trips to the heart of the regions, working alongside the best craftsmen. Absolute priority: taste!
Enthusiastic about the best that nature has to offer, Frédéric Vardon showcases all its diversity, and gives pride of place to the products of the moment. “Committed and invested in responsible cooking, I make it a point of honor to cook according to what nature produces, at the best of its maturitý. It’s high time to think global and respect biodiversity. From production methods to supplies, right through to waste management, initiated many years ago, I’m committed to a sustainable approach. It’s my responsibilitý as a citizen.”
In 2010, he opened Le 39V in the heart of the Golden Triangle, on the 6th floor of a Haussmann building, a haven of peace overlooking the Parisian rooftops of Avenue George V. In 2021, Le 39V is getting a facelift, entirely redesigned and decorated by designer Raphaël Navot. Today, more than a restaurant, this human-scale culinary house nestled on the rooftops of Paris is an atypical, gourmet, comfortable and caring place to live.
In September 2022, he bought Café Max, a legendary Parisian bistro in the 7th arrondissement. This emblematic establishment, with its original decor, turn-of-the-century zinc counter, wooden tables and red banquettes, is located in the heart of Paris, between the Invalides and the École Militaire. This cozy, friendly bistro remains a must-visit, with its bistro style, generous cuisine, hushed atmosphere and owner who loves good food.
